Heatlie barbequed mango and snow peas skin stuffed chicken breast
(Serves 5)
Ingredients
- 5 chicken breast fillets with skin on
- 1 fresh mango
- 10 garden snow peas
Method
- Halve seed and cut mango into long strips of approx 2 cm wide
- Destring snow peas (take the string off the sides)
- Remove tenderloin from chicken breast and set aside (for delicious tenderloin skewers)
- Gently pick skin up at the back of the breast (thick end) and slide your finger as far as you can between the skin and breast
- Insert 1 mango strip and 2 snow peas under the skin, then season chicken breast with salt and freshly ground pepper
Place the fillet on your Healtie hotplate skin side down and cook until beautiful golden brown (approx 3 – 5 mins), then turn breast over and continue cooking for a further 15minutes on your hot plate with your Heatlie lid down
Serving suggestion: Serve with fresh green salad
